Chemically or physically modified starch from corn, potato, wheat, or tapioca used as a thickener and stabilizer. Approved as GRAS by the FDA and safe by EFSA. The modification reactions (oxidation, esterification) replicate those that occur naturally in human carbohydrate metabolism. EFSA found no safety concern at reported use levels.
