Yeast Extract

autolyzed yeast · autolyzed yeast extract · hydrolyzed yeast

Flavor enhancer made by breaking down yeast cells to release naturally occurring free glutamate — the same umami compound as added MSG. Widely used as a "clean-label" way to add glutamate without listing MSG on the label.

Concerns

  • FDA states that yeast extract and autolyzed yeast naturally contain free glutamate (the glutamate in MSG); foods containing them therefore cannot be labeled "No MSG" or "No added MSG" (FDA)
  • The honest concern is label transparency rather than toxicity: a comprehensive review found most reported adverse effects of glutamate/MSG come from animal studies at doses far above dietary intake, and that 'MSG symptom complex' is poorly supported in controlled human trials (Zanfirescu et al. 2019)
